Angel cake recipe

What you need

  • 1 1/4 cups cake flour (cake flour or cornflour has low or no gluten)
  • 1 3/4 cups granulated sugar (pure white sugar)
  • 12 to 14 egg whites
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1 1/2 tsp cream of tartar
  • 1/2 tsp salt
  • 1 angel food cake tin (10 inch ring tube tin)

What you need to do

Preheat oven to 190 degrees C. Make sure your pan is clean and dry, and do not grease.

Sift flour three times.

Beat egg whites, cream of tartar, salt, vanilla and almond extract until soft peaks form. Gradually beat in the sugar and continue to beat until meringue mixture holds stiff peaks. Sift in one quarter of the flour into meringue mixture. Fold in another quarter and fold. Continue process till you have folded in all the flour.

Bake for approximately 30 mins.

When cool run a knife around the edge and your cake should fall out.
