Budget and Child Friendly Ice Cream Cake

This recipe is a great twist on the regular supermarket ice cream cake, which has three layers consisting of vanilla, chocolate and strawberry flavoured ice cream with sprinkles on top. You could repeat this recipe or add your own twist. It is extremely easy to make, relatively inexpensive and is guaranteed to please children and adults alike.

What you need

  • 1L vanilla ice cream
  • 1L strawberry ice cream
  • 1L chocolate ice cream
  • 1 x 63g 3 finger Cadbury Twirl
  • 2 x 45g packets of Maltesers
  • 75g white Pascalls marshmallows
  • 75g pink Pascalls marshmallows
  • hundreds and thousands to decorate

Create the chocolate layer first by putting the chocolate ice cream in a large bowl and gently crushing the twirl fingers over the top. Once the ice cream has softened up use a wooden spoon to whip the ice cream and combine the chocolate twirl. Any other mix in could be added now. You may wish to add cookie dough brownie or fudge. (And you don't have to use all three flavours of ice cream, use whatever combination you wish. You might like to try a chocolate, peppermint and vanilla layered ice cream cake).

For any type of ice cream cake you are making the best utensils to use are a spring-form pan and spatula. Using your spatula spoon and smooth out the chocolate mixture in the base of the spring-form pan. Cover with foil or glad wrap and put in the freezer until firm again.

Either use another large bowl or clean your chocolate bowl and then add your vanilla ice cream. Crush or cut maltesers in half and place in a small bowl. Allow vanilla ice cream to soften and then mix in pink marshmallows and whip the ice cream. Remove your pan from the freezer and remove foil cover.

Sprinkle crushed maltesers over the chocolate layer and then spoon over the vanilla layer, cover and place back in the freezer. Repeat previous steps with the strawberry ice cream and white marshmallows. Cover and put in the freezer until firm. When you serve your ice cream cake you can decorate it with hundreds and thousands, chocolate sprinkles, or chopped nuts.
